The Freezer Meal day was GREAT!!!!

We had so much fun making our freezer meals on Friday!! We started at about 8:45 am and we were done by 1:00 pm. I made 11 meals and my friend made 19!!!!! I made two lasagnas, two sheperd pies, 2 meals of the most yummiest ribs ever!! and 5 meals made with one big brisket! and last but not least 30 ice cream sandwiches!!!!!!!!!

SOOO..... here are some recipes...

1. BRISKET
Ok you need to buy a large brisket at Walmart or Costco. They run about $15 each. Season it however you like (I rubbed Montreal Steak seasoning on it and put half of an onion cut in quarters on the top and about a Tbls of minced garlic over the top of the onion and seasoning). Then wrap aluminum foil over the whole piece of meat and cook it at about 250 for 7 hours. After you take it out, let it cool a little bit. You can then cut some of it into slices for sandwiches. With the rest you'll want to shred it and take off alot of the fat. Then divide the rest in half and mix one half with your favorite bottle of salsa and the other half with your favorite bottle of BBQ sauce. The salsa part can be used as taco meat and the other can be used for BBQ sandwiches. Let me tell you, the taste of both of these is AMAZING!!! So tender and yummy!! When you get all of your meat done put them into FREEZER zip lock bags and get all of the air out of the bags and then pop them into your freezer!

2. LASAGNA
Make up your own favorite recipe for lasagna or you can use my recipe:
1-2 lbs ground beef
1/2 onion
1 jar spaghetti sauce
1- 16 oz ricotta cheese or cottage cheese
8 oz mozzarella cheese shredded
1 egg
6 lasagna noodles (regular kind, uncooked)

Mix your meat with your onion and then drain. Add the spaghetti sauce and heat through. Take a foil 9x13 pan and start by putting some meat sauce in the bottom. Next mix your ricotta cheese with the egg and put half of that mixture on top of the meat mixture then top that with some mozz cheese and then finally top that with the 3 uncooked noodles. Repeat this again and end with the last of your meat mixture and your leftover mozz cheese. Put some HEAVY DUTY aluminum foil over the top of the lasagna and stick in your freezer!!! Don't worry, the moisture from your freezer will make your noodles be soft when it is time to cook! This is such an easy and delicious lasagna!! When you take out your lasagna you should let it thaw and then bake it at 350 for 55 mins!

3. ICE CREAM SANDWICHES
These are the easiest things you will ever make in your life!!! All you need to do is buy some already baked cookies like the Walmart brand of chocolate chip, macaroon or sugar cookies (super cheap) and then buy your favorite ice cream. Simply put a scoop of ice cream on one cookie and put another cookie on top and if you want you can roll it into some mini chocolate chips or crushed candy bars or even some crushed graham cracker crumbs. Wrap in clear plastic wrap and put into a FREEZER zip lock bag! You can fit like 15 sandwiches in a gallon sized bag. These are perfect for a quick and fast dessert or for an after school snack!

It is late now and I dont have the other two recipes in front of me so I will add them to my blog tomorrow! Have fun with these! Invite some friends over and crank out a bunch of meals together! You will love having these on hand!

*** Remember to get some aluminum tins that you can freeze in but that can be thrown away after the meal, some HEAVY DUTY aluminum foil, and FREEZER zip lock bags!
